Chicken Salad w/ Berries

Ingredients

  • 1 pound skinless, boneless chicken breast tenders
  • 1 tbsp cooking oil
  • 6 cups packaged torn mixed salad greens
  • 1 1/2 cups fresh blueberries and / or raspberries
  • 2 tbsp shredded fresh basil leaves
  • 1/2 cup bottles balsamic vinaigrette salad dressing

Preparation

Step 1

1. In a 12" heavy skillet, cook chicken in hot oil over medium - high heat for 6 to 8 minutes or until no longer pink, turning once. Cool slightly. Use two forks to coarsely shred chicken.

2. In a large bowl, toss together the greens, berries, and basil. Drizzle dressing over salad mixture; toss gently to coat. Top with shredded chicken.
