Scallops au Gratin

Ingredients

  • 1 Tblsp butter
  • 1 lb sea scallops
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1 c. chicken broth
  • 1/2 c. half and half
  • 1/2 c. reduced fat sour cream
  • 3 Tblsp flour
  • 1/4 tsp salt
  • 1/4 tsp paprika
  • pepper and nutmeg
  • 2 Tblsp sherry
  • 1 (2 oz) jar diced pimento, drained
  • 4 English muffins
  • 1/4 c. bread crumbs
  • 2 Tblsp grated Parmesan

Step 1

Preheat broiler

2. Melt butter in a large nonstick skillet over med heat. Add scallops; cook 3 minutes on each side or til done. Remove from pan and keep warm. Add onion and pepper, saute 5 min or til tender.

3. Combine chicken broth, half and half, sour cream, flour, salt and other seasonings in bowl. Stir well with whisk. Add broth mixture to pan, bring to a boil. Reduce heat to med low, simmer 5 minutes or until thick, stirring constantly. Remove from heat, stir in scallops, sherry and pimiento.

4. Place muffins on a foil-lined jelly-roll pan. Spoon about 1/2 cup scallop mixture over each half. Sprinkle with crumbs and cheese. Broil 5 minutes or til brown and bubbly.
