Tortellini and Sausage Soup

Ingredients

  • 8 Italian sausages (remove skin)
  • 2 tbsp. butter
  • 1 garlic clove, minced
  • 16 oz cream cheese, cut into 1" cubes
  • 1 tsp salt
  • 2 tbsp. Italian seasoning
  • 2 tbsp. dried onion flakes
  • 2 28 oz can of diced pureed or stewed tomatoes
  • 1 10.75 oz can of tomato soup
  • 3 cans of water (from tomato soup can)
  • 2 16 oz bag of frozen cheese tortellini
  • 1/2 cup frozen spinach
  • 1/2 cup parmesan cheese

Preparation

Step 1

Heat skillet and cook sausage (remove skin and crumble) until fully cooked. Remove to a paper towel lined plate to drain and set aside.

Heat butter in dutch oven and add garlic to brown (2-3 minutes). Add cream cheese, Italian seasoning, onion flakes, salt and stir until cheese starts to melt. Add tomatoes, tomato soup and water to pot and bring to a boil. Puree soup and return to stove.

Reduce heat and add sausage and cook for 2 minutes. Add tortellini and spinach and boil for 5-7 minutes (don't overcook tortellini). Add parmesan cheese and serve.
