Rigatoni with Sausage and Olives

Ingredients

  • 1/2 pound rigatoni
  • 2 Italian sausages, pre-cooked and cut into round slices
  • 1/2 cup fresh mushrooms, chopped
  • 1/2 cup black olives, pitted and chopped
  • 2 cups freshvtomato sauce
  • 1/2 cup light cream
  • Pinch of freshly ground black pepper
  • 1/4 cup freshly grated Parmesan cheese

Preparation

Step 1

Bring a large pot of water to a boil. Cook the pasta according to the package directions.

Meanwhile, in a large skillet, over medium heat, add the sausage, mushrooms and olives. Sauté untilvthe mushrooms begin to soften. Add the tomato sauce and bringvto a simmer. Add the cream and black pepper. Heat through, but do not boil.

Drain the pasta and place vin a large bowl. Stir in the sauce. Garnish with cheese and serve.
