Ingredients
- 1/2 pound green beans, trimmed
- 1 1/2 teaspoons extra virgin olive oil
- Sea salt and freshly ground black pepper, to taste
- 1 pint cherry tomatoes, cut in half
- 1 small shallot, finely minced
- 1/2 tablespoon red wine vinegar
- 1/2 tablespoon balsamic vinegar
- 2 to 3 tablespoons extra virgin olive oil
- 1 tablespoon minced fresh herbs (basil, parsley)
- Sea salt and freshly ground black pepper, to taste
Preparation
Step 1
Combine first 3 ingredients. Toss green beans with olive oil, salt and pepper. Grill over a medium-hot coals until grill marked and tender.
Cut green beans in half. Toss together all ingredients in a large bowl. This salad may be held for a few hours to allow flavors to combine.
Note: If you don't have a shallot on hand, you may use onion instead. To take the edge off the raw onion, soak chopped onion in cold water for 30 minutes and drain. Proceed with recipe.
