Avocado Corn Salsa

Ingredients

  • 1 ripe avocado, diced
  • 2-3 tsp lime juice
  • 1 ripe red tomato
  • 1 ear corn, shucked
  • 1 scallion, finely chopped
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup cilantro, chopped
  • salt and pepper to taste

Preparation

Step 1

place the avocado in bottom of medium mixing bowl and gently toss with lime juice. Spoon tomato on top. Add corn. The salsa can stay at this stage in fridge for up to 2 hours. Then take out and add jalapenos and cilantro gently toss and season to taste.
