Ingredients

  • 1 large orange
  • 1/3 cup packed dark brown sugar
  • 1/4 cup red wine vinegar
  • salt and ground black pepper
  • 4 chicken legs, split (4 thighs, 4 drumsticks, about 2 1/2 lb total), skin removed
  • 2 Tbsp all-purpose flour
  • 6 garlic cloves, smashed
  • 1 large red onion, cut into 1/2 inch thick wedges
  • 1 cup long grain white rice
  • 1/2 cup fresh parsley, roughly chopped

Step 1

1. Remove strips of zest from orange. Thinly slice the zest. Juice the orange into a 5 to 6 quart slow cooker. Whisk in sugar, vinegar, 1/4 tsp salt and 1/4 tsp ground black pepper.
2. Toss chicken with flour, then add to the slow cooker along with garlic and orange zest. Scatter the onion over the top. Cook, covered, until chicken is cooked through and sauce has slightly thickened, 7 - 8 hours on low or 5 - 6 hours on high.
3. Thirty mins before serving, cook rice.
4. When rice is nearly finished cooking, transfer chicken to plates or a platter. Fold in parsley over chicken and serve with rice.
