Ingredients
- 1 1/4 lbs small red potatoes
- 3 cups beef broth
- 3/4 pound kielbasa or other cooked sausage sliced 1/3-inch-thick
- 1 small onion, minced
- 1 scallion, slice thin
- 2 Tbs. dry white wine
- 2 Tbs. white-wine vinegar
- 1/2 cup olive oil
- 1 1/2 tsp. minced parsley
- 1 large garlic clove, minced
Preparation
Step 1
In a large saucepan combine the potatoes and the broth, bring broth to a boil and simmer the potatoes for 10 to 20 minutes or until they are tender. Drain the potatoes and let them cool until they can be handled. Peel and slice them 1/3 inch thick.
In a large bowl combine the sausage, the potatoes, the onion and the scallion. In a small bowl whisk together the wine, vinegar, oil, parsley, garlic and salt and pepper to taste. Toss the dressing over the warm potato mixture, toss gently and season with salt and pepper.
