Ingredients

  • 2 pounds fresh shrimp, shelled and deveined
  • 1 tablespoon salt
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 cup softened butter, divided use
  • 4 cloves garlic, crushed
  • 1 tablespoon minced parsley
  • 1/4 pound fresh mushrooms chopped or 2 (4-1/2 ounce) jars of whole button mushrooms
  • I would also top with bread crumbs

Step 1

In a bowl, toss shrimp with salt, oregano and thyme. Chill at least 20 minutes. In separate small bowl, cream together 1/2 cup of the softened butter with garlic and parsley. In a skillet, saute mushrooms in remaining butter 3 to 4 minutes. Place shrimp in 9-inch-by-13-inch baking dish. Top with mushrooms. Dot with garlic butter mixture. * Bake at 375 degrees for 20 minutes or until shrimp are pink and shiny. Makes 6 servings.
