Pecan Pie, Jasper White's

Ingredients

  • 1 stick butter, at room temperature
  • 3/4 cup light brown sugar
  • 3 large eggs
  • 1 cup chopped pecans
  • 3/4 cup dark corn syrup
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 9-inch unbaked pie crust

Preparation

Step 1

Preheat oven to 375 degrees.

Beat the butter and sugar together in the bowl of an electric mixer until light and fluffy, about 3 minutes. Add the eggs, one at a time and continue to beat until incorporated. Add the chopped pecans, corn syrup, vanilla and salt and mix well.

Pour the filling into the pie shell, place in oven and bake for 15 minutes.

Remove the pie, lower the oven temperature to 350 degrees and close the oven door.

Working very quickly, arrange the pecan halves on top of the pie in a circular design. Return the pie to the oven and bake until the filling is set and the top is well browned, 30 to 35 minutes.

Cool completely before serving.
