Chicken Salad

Ingredients
- 2 large cloves of garlic ( I use more)
- 1 tabl. dijon mustard
- 1/2 teas. salt
- 1/4 teas. each of pepper and rice wine vinegar
- 1/3 cup vegetable oil
- 4 cups cooked Wild Rice ( I use 2 pkg. Quiggs white and Wild Rice Mix
- Juice of 1/2 Lemon
- 1 whole chicken breast, cubed ( 3 Halves) boil in chicken broth
- 3 scallions
- 1/2 of red pepper
- 2 oz. snow peas ( I steam slightly)
- 1/2 European cucumber, seeded and diced
- 1 cup toasted pecans

Preparation
Step 1
Boil Chicken in Cicken broth until done. Toast Pecans and let cool. Steam snow peas. Add other ingresdients together then add chicken and snow peas and pecans.
