Goat Cheese Grits

Ingredients

  • 4 cups water
  • 1 cup uncooked quick-cooking grits
  • 3/4 tsp salt
  • 1/2 cup (4 oz) goat cheese
  • 2 tsp fresh parsley, finely chopped
  • 1 tsp fresh basil, finely chopped
  • 1/4 tsp black pepper

Preparation

Step 1

1. Bring 4 cups water to a boil in a medium saucepan. Gradually add grits and salt to pan, stirring constantly with a whisk. Reduce heat and simmer 5 minutes or until thick, stirring occasionally.

2. Remove from heat, stir in cheese, and remaining ingredients.

Makes 4 servings. Each serving = 7 Weight Watchers points.
