Pinto Bean Pecan Pie

Ingredients

  • 1/2 cup sugar
  • 3/4 cup brown sugar
  • 1/2 cup butter
  • 1 heaping cup mashed cooked pinto beans
  • 2 eggs
  • 1/4 cup karo syrup
  • 1 tsp vanilla
  • 1/2 cup chopped nuts pecans or walnuts
  • 1 - 9 inch unbaked pie shell

Preparation

Step 1

Blend sugars, eggs and butter until creamy.

Add pinto beans, karo syrup and vanilla. Blend well.

Pour into unbaked pie shell and top with nuts.

Bake @ 375* for 20 minutes
then @ 350* for 25 minutes

Serve with whip cream or ice cream.
