Ingredients
- 1 cup butter
- 1/2 cup brown sugar
- 2 cups flour
- 1 cup ground pecans
- 2 tsp vanilla
- pinch salt
Preparation
Step 1
Line cookie sheet with parchment paper or silicon mat.
In a large bowl with an electric mixer beat together butter & sugar until creamy.
Add flour, ground pecans, vanilla & salt, beat just until forms a smooth dough.
Wrap dough in plastic wrap & refrigerate for 30 min to 1 hour to allow it to firm up enough to shape.
Preheat oven to 325
Roll dough into 1 inch balls
Place them on cookie sheet & flatten slightly (to about 1/2 inch thick) with bottom of glass dipped in flour to prevent dough from sticking to glass
Place in oven & bake for 12-15 min or until set & lightly browned on bottom
Let cool on rack
