Ingredients
- Toppings:
- 1 lb. boneless skinless chicken breasts
- 1 14.5-oz. can diced tomatoes
- 1 pkg. taco seasoning
- 1/2 cup frozen corn
- 1/3 cup fresh chopped onion
- 1/2 tsp. chili powder
- 1/2 tsp. crushed red peppers
- Salt and pepper to taste
- Tortillas
- Salsa
- Diced fresh tomatoes
- Shredded low-fat cheese
- Shredded lettuce
Preparation
Step 1
Spray crockpot with non-stick spray.
Place chicken in the crockpot.
Combine all other ingredients (except tortillas) in bowl and then pour over chicken.
Cook on low for six hours.
Shred chicken with a fork before spooning into tortillas.
