Preheat oven to 325 degrees.
Place walnuts, first measurement of ¾ cup honey, cinnamon and salt in small sauce pan. Heat on medium just until honey thins–stir constantly to combine all ingredients.
Stack 12 phyllo sheets with layer of egg wash between each sheet to ensure the filo sticks together—start by laying a single sheet of phyllo on a flat, non-stick surface, and use a basting brush to apply the egg wash and honey drizzle across the surface. Repeat 11 times, layering the phyllo one on top of the other
Place honey-walnut mixture in middle of stacked phyllo sheets and spread evenly to just inside the edge of the pastry.
Cover honey-walnut mixture with additional 12 sheets of filo, remembering to brush the egg wash and honey drizzle in between each layer.
Use pizza cutter (or a triangle-shaped cookie cutter) to cut pastry into triangles. Pinch sides together to seal honey-walnut mixture inside each pastry. Brush egg wash over surface of triangles to create golden-brown finish.
Put triangles on cookie sheet lined with parchment paper and bake 10 minutes or until golden brown.
Serve with feta cheese and drizzle honey over top.
