Ingredients
- 2 slices bacon, chopped
- 1 tbsp butter
- 2 large onions, finely sliced
- 4 to 6 tomatoes (or 1 cup canned tomatoes), chopped
- 1 tbsp tomato puree (I just use ketchup)
- 4 cups chicken stock
- salt and pepper
- 1 tsp sugar
- 1 tbsp parsley
- 1/4 tsp thyme
- 1 tsp basil
- fried garlic croutons (optional)
Preparation
Step 1
Heat bacon in pan. When fat has run, add butter; melt. Add onions; cook gently 5 to 6 minutes, until tender and golden brown. Add tomatoes, tomato puree, stock, salt, pepper, sugar, and herbs; bring to boil. Simmer 20 minutes or until tomatoes are tender. Put through food mill or blend in an electric blender or food processor(I will often press it through a fine sieve after it has been blended). Adjust seasoning. Serve hot. Sprinkle with additional basil and parsley and croutons.
