Preparation
Step 1
Prepare the grill for indirect cooking. If you have a charcoal grill, build the fire on one side of the grill, or around the sides of the grill, leaving an empty space in the middle. For a gas grill, if it has controls for the left and right, heat one side. If you have front and back burners, heat the back.
Make a rimmed baking pan out of a double thickness of heavy-duty aluminum foil. The pan should be just large enough to hold all the asparagus in a single layer and fit comfortably on the part of the grill away from the heat.
In a shallow dish, combine the asparagus, garlic, oil and salt and pepper to taste. Toss to coat. Transfer the mixture to the rimmed baking pan. Place the pan on the grill over indirect heat.
Cover the grill and cook the asparagus, maintaining the temperature inside the grill at about 350 degrees, until the asparagus is tender and its skin slightly wrinkled, turning the asparagus once or twice during the cooking to help them roast evenly.
The asparagus should take 15 to 25 minutes to cook, depending on the thickness of the stalks and the heat inside the barbecue. Serve immediately.
