Ingredients
- 4 boneless skinless chicken breast halves
- 1 teaspoon Italian seasoning
- 1/3 cup grated Romano cheese, divided
- 4 baking potatoes, peeled and cut into eighths
- 1/2 cup low fat Italian salad dressing
Preparation
Step 1
Preheat oven to 400 degrees. Lightly grease a casserole dish. Combine 1/4 cup of the Romano cheese and the Italian seasoning in a pie pan or shallow bowl; dredge chicken in mixture and place in casserole dish. In a large mixing bowl, toss potatoes with salad dressing; pour over chicken. Top with remaining Romano cheese. Cover dish with aluminum foil wrap and bake for 30 minutes or until chicken is cooked through.
SERVING SUGGESTION: Steamed green and yellow (wax) beans.
