Ingredients
- 1 pound extra-lean ground beef
- 1 teaspoon garlic powder
- 2 cups water
- 1 cup salsa
- 8 ounces elbow macaroni
- 2 cups frozen whole kernel corn
- 1 1/2 cups shredded Pepper Jack cheese
- 1/2 cup milk
- 1/2 cup shredded Cheddar cheese (Mexican style or sharp, if available)
Preparation
Step 1
Preheat oven to 375 degrees. In a large oven-proof skillet, brown ground beef and garlic powder over medium- high heat. Drain beef of excess fat. Add water, salsa and macaroni to skillet. Bring to a boil, reduce heat and simmer for 10 minutes or until macaroni is tender and water has been absorbed. Add corn and stir to combine. Add Pepper Jack cheese and up to 1/2 cup of milk; stir until cheese has melted and is incorporated in beef and macaroni mixture. Sprinkle top with Cheddar cheese and place in oven until cheese has melted and top is golden brown.
SERVING SUGGESTION: Corn on the cob and a big salad.
