- 2 sticks unsalted butter, softened
- 1 1/2 cups packed brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 TBSP vanilla
- 1 1/2 cups AP flour
- 2 tsp kosher salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 cups oats (either quick or regular)
- 1 cup M & Ms
- 3/4 cup chocolate chips (milk or semisweet)
- 1/2 cup pecans, chopped
- 2 1/4 cups Rice Krispies
Heat the oven to 375.
Cream the butter with both sugars in a mixing bowl til fluffy. Add eggs one at a time, beating well after each addition. Add the vanilla and beat.
Combine the flour, salt, baking powder and baking soda. Add to the mixing bowl and mix til combined. After that, add in the oats, M & Ms, chocolate chips and pecans. Add the cereal at the very end, mixing til just combined. Do not overmix.
Use a cookie scoop to scoop balls of dough onto a cookie sheet. Bake til golden brown, 20 to 25 minutes, and then allow to cool on a rack.
