Ingredients
- 1 LB shrimp
- 1 C chopped carrots
- 1 C chopped onions
- 1 C chopped celery
- 2 tsp finely chopped garlic
- S & P to taste
- 2 C risotto rice
- 4 oz parmesan cheese
- 1/2 C finely chopped parsley
Preparation
Step 1
boil risotto rice
when done, pour off broth & reserve
rinse risotto in cold water
lightly coat saute pan w/ olive oil
add garlic & cook until golden & limp
add vegies, shrimp & saute for a few min.
add reserved risotto broth
cook until flavors have combined & broth
had reduced
add mix to risotto
add S & P to taste
sprinkle w/ cheese & parsley
