Ingredients
- 1 LB regular sausage
- 1 LB (or more) leftover cooked turkey
- in lg. pieces
- 1 can (#2 size) cream-style corn
- 2 eggs
- 1/4 C chopped green pepper
- 1/4 C frozen whole kernel corn
- bread crumbs - for topping
- butter - for topping
Preparation
Step 1
cook & crumble sausage - drain if needed
place in bottom of casserole
spread turkey on top of sausage
beat eggs, mix w/ creamed corn & frozen
corn
add green pepper & mix well
season to taste w/ S & P
pour over turkey sausage layers
top casserole w/ light layer of crumbs
dot w/ butter
bake @350 for 1 HR 15 min
if desired, casserole can be made ahead
& refrig. or frozen for later use
