Ingredients

  • 2 cups great northern beans
  • salt pepper to taste
  • 1/2 cup celery and onion, chopped small
  • 1 8 oz can tomato sauce
  • 1 bunch kale, remove the thick stems
  • 6 oz spaghetti, cooked

Step 1

Soak beans overnight in a large pot. Drain, rinse. Cover with water. Cook for 1 hour. Drain, rinse. Cover with water.

Add salt, pepper, celery, onion and tomato sauce. Cook 1 more hour; check liquid level while cooking.

Cook early in day and let sit a few hours before serving.

Cook the kale in a pot of water until tender. Salt to taste.

Drizzle a little olive oil over the beans and mix. Add kale and spaghetti, mix, serve.
