Broccoli Frittata

Ingredients

  • 8 eggs
  • 2 t olive oil
  • 1 small red onion sliced (about 1 cup)
  • 2 c chopped cooked broccoli
  • 1/4 t salt
  • pepper
  • 1/2 c shredded extra sharp cheddar

Step 1

Preheat broiler.

Separate 4 of the eggs, putting whites into a medium sized bowl and discard the yolks. Add 4 whole eggs and 2 T water to whites and whisk well.

In medium ovenproof nonstick skillet, heat oil, add onion until soft (5 min). Add broccoli and cook another 2 min. Season with salt and pepper. Pour eggs over broccoli mixture coating veggies evenly. Reduce heat and simmer until the egg mixture has set around the edges but is somewhat liquid in the middle (about 8 min). Sprinkle with cheese.

Place skillet under broiler about 2 inches from heat until the surface is golden 1-2 min. Do not overcook.
