Barley Beef Stew

Ingredients

  • 1 1/2 LBS extra-lean grd. beef
  • 1 C chopped onion (abt 1 large)
  • 1 C sliced celery (abt 2 med stalks)
  • 1 C uncooked pearl barley
  • 2 1/2 C water
  • 1 TBL chile powder
  • 1/2 tsp salt
  • 1/4 tsp peppr
  • 1 (28-oz) can tomatoes, undrained

Preparation

Step 1

cook ground beef, onion & celery in
nonstick dutch oven, stirring
frequently, until beef is brown
drain

stir in remaining ingredients
break up tomatoes
heat to boiling
reduce heat
cover & simmer abt. 1 hr or until barley
is done & stew is desired consistency
