Spelt Cookies

Spelt is an ancient grain that adds a nutty flavor. Coconut oil is used instead of butter to take advantage of the positive health benefits of coconut oil. Dairy and soy free.

Ingredients
- 1 c. organic coconut oil
- 1 c. organic sugar
- 1 c. organic light brown sugar
- 2 c. organic spelt flour
- 2 large organic eggs
- 1 Tbsp. vanilla
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1/2 c. organic soy free and dairy free chocolate chips
- 2 c. organic whole oats
- 1 c. organic flaked coconut
- 1 c. organic chopped pecans
Preparation
Step 1
1.Preheat oven at 350 degrees.
2.In a large bowl, whip the coconut oil for 2 minutes.
3.Add sugar and mix for an additional minute.
4.Mix in flour. Then add eggs, vanilla, baking powder and baking soda. Mix until well blended.
5.Add chocolate chips, oats, coconut and pecans. Mix well on low.
Scoop out batter. Roll between palms and place on a cookie sheet covered in parchment paper.
6.Bake at 350 for 10 minutes.
7.Makes 60 cookies.
