Peanut Butter Granola Energy Granola Bars
Yummy! You can try lots of different variations of this recipe!
- 1 2/3 cups old-fashioned rolled oats
- 1/2 cup whole raw almonds
- 2/3 cups peanut butter
- 1/2 cup honey
- 1 1/2 tsp vanilla extract
- 1 cup crispy rice cereal
- 1/3 cup chopped dried cherries or cranberries
- 1/2 tsp salt
- Optional: Chocolate chips
Preheat oven to 350 degrees. Coat an 8-inch square pan with nonstick spray; set aside.
Toast oats and almonds in the oven on a baking sheet in a single layer until browned, 10 minutes.
Heat peanut butter, honey, and vanilla in a saucepan over medium until peanut butter melts. *If you love chocolate, you can add a handful of chocolate chips to this mixture.
Combine cereal, cherries, salt, toasted oats, almonds and peanut butter mixture in a large bowl until ingredients are coated with peanut butter mixture. Press mixture into prepared pan and let chill until firm, 10 - 15 minutes. Cut into bars and wrap in plastic wrap.
