Honeydew Bellini

Ingredients

  • 4 cups 1- inch cubes ripe honeydew
  • 2 Tbl sugar
  • 1 Tbl fresh lemon juice
  • 2 bottles of prosecco

Preparation

Step 1

Line a large strainer with 2 layers of damp cheese cloth set over large bowl. Puree melon, sugar, and lemon juice in a blender until smooth. Pour puree into lined strainer. Let puree drain until only pale green pulp remains.

About 30 minutes. Discard pulp in strainer. Pour scant 3 Tbl melon juice into each 10 champagne glasses. Fill glasses with Prosecco.
