SHEPHERD'S PIE

Ingredients

  • 1 1/4 lb red potatoes
  • 2 cloves garlic
  • 3/4 cu fat free sour cream
  • 1/2 cup shredded cheddar
  • 1 lb extra lean ground beef
  • 2 tbsp flour
  • 3 cups frozen mixed vegetables
  • 3/4 cup beef broth
  • 2 tbsp ketchu

Preparation

Step 1

Cook potatoes and garlic in boiling water till tender. Drain. Return to pan and add sour cream. Mash with 1/2 of the cheese (1/4 cup) cheese till smooth.

Heat oven to 375 degrees.

Brown meat in skillet. Stir in flour. Cook one minute. Add vegetable, broth and ketchup. Cook 5 minutes. Spoon into an 8" square baking dish. Cover with potatoes.

Bake 3 minutes till heated through. Top with remaining cheese and bake 2 minutes till melted.
