Ingredients
- 2 lamb chops
- 2 bulbs roasted garlic
- 1/2 tsp dried thyme
- s & p to taste
- 1-1/2 c. olive oil (for marinating)
- 1 c. red wine
- 3 tbsp. olive oil
- 1 small onion, chopped

Step 1
1. Place lamb chops in a shallow dish and smear both sides with roasted garlic. Season with thyme salt and pepper. Cover with 1-1/2 c. olive oil and refrigerate overnight.
2. Remove chops and marinate from dish, and scrape off the oil. Place chops back in the dish, and cover with red wine. Refrigerate for 4 hours.
3. Heat 3 tbsp. olive oil in cast iron skillet over medium-high heat. Sauté chopped onion until tender. Place lamb chops into skillet, cover and cook for 8-10 minutes on each side.
