YELLOW RICE WITH BEANS

Ingredients

  • STIR IN:
  • 1/4 cup diced onion
  • 1/2 tsp. minced fresh garlic
  • 1/2 tsp. ground turmeric
  • 2 tsp. olive oil
  • 1/2 cup dry converted white rice
  • 11/4 cups low-sodium
  • chicken broth
  • 1 can black beans, drained
  • and rinsed (15 oz.)
  • 1 Tbsp. seeded and minced
  • jalapeño
  • Juice of 1/2 a lime
  • Salt to taste

Preparation

Step 1


SAUTÉ:
Sauté onion, garlic, and turmeric
in oil in a saucepan over medium
heat, 2–3 minutes. Add rice, stir
to coat, then add broth and bring
to a boil. Cover rice, reduce heat
to low, and simmer until tender,
15–20 minutes.
Stir in beans and jalapeño and
cook to heat through. Stir in lime
juice and season beans with salt.
