Sweet Potato Cheese Puff

Ingredients
- 2 cups sweet potatoes, mashed
- 8 ounces cream cheese, softened
- 1/4 cup milk
- 2 eggs
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon grated lemon zest
- 1/2 cup thinly sliced scallions
- 1/4 teaspoon freshly ground pepper
- Sour cream, for garnish
- Fresh sprigs parsley, for garnish
Preparation
Step 1
Preheat oven to 350 degrees.
Butter a casserole dish
Place all ingredients in mixing bowl. Blend at medium speed until well combined, then beat on high speed until light and fluffy, about 2 minutes. Spoon mixture into the buttered casserole dish.
Bake at 350 degrees, uncovered, for 35 to 45 minutes, or until a knife inserted in center comes out clean. Cool for 5 minutes. Garnish with a dollop of sour cream and a sprig of fresh parsley.
Serve immediately.
