Ingredients
- 1 to 2 tbsp vegetable oil
- 1 1/2 cups chopped onion
- 1 garlic clove chopped
- 2 pounds ground beef
- 2 large fresh tomatoes
- 1 cup peppered tomato sauce
- 2 cups fresh corn
- 1 tbsp chili powder
- salt
- 1/2 cup yellow corn meal
- 1 1/4 cups (5 oz) grated cheddar or colby cheese

Step 1
1. Preheat oven to 350. Use a extra large skilled to heat oil and saute onion and garlic until soft. Add ground beef and cook until redness disappears.
2. Immerse tomatoes in boiling water 30 seconds, the core peel and chop. Add tomatoes to skilled along with tomato sauce, corn, chili powder and salt. Bring to a boil. Reduce heat and slowly add corn meal. Cook 15 minutes over low heat stirring from time to time.
3. Pour into large greased casserole. Top with grated cheese, bake 30 minutes until cheese bubbles. Serve hot.
