FRED’S AUNT RITA’S MEATBALL & SPAGHETTI RECIPE

Ingredients

  • Meatball:
  • ¼ cup Olive Oil
  • 1 large onion diced
  • 1 head of garlic minced
  • 3 – 28 oz. Cans of S&W Crushed Italian Recipe Tomatoes with Oregano & Basil (I have found this is the best canned tomatoes)
  • 1 tsp garlic salt
  • 1 tsp ground pepper
  • 2 tsps Italian seasoning
  • ¼ cup dried chopped onion
  • 3 tbs garlic powder
  • A handful of fresh basil
  • 2 cups of red wine – (1 to cook with and the other to sip)
  • 1 lb. ground beef
  • ½ lb ground pork
  • ¼ cup chopped fresh mint
  • ¼ cup shredded fresh parmesan cheese
  • 1 egg
  • Salt & Pepper
  • 1 lb. Country Pork ribs
  • 1 lb. Italian Sausage

The only way I know how to make this is to feed a whole football team. There is no set recipe. I have helped and watched Aunt Rita several times making the “sauce.” This is how I make it (Rita uses full fat but I use only lean meats.)

In a large pot on medium/low heat add olive oil, stir in diced onion and garlic. Stir constantly, do not let brown, just translucent and yellow. Next add the crushed tomatoes. As you empty the tomatoes out of each can, rinse the can out with about ¼ cup of water and add to pot. (Waste not, want not!) Turn up the heat, add garlic salt, pepper, Italian seasoning, dried chopped onion, garlic powder, and basil. Bring to a boil and let simmer.

While the sauce is simmering it’s time for “meat – a – ballas.” With your hands mush the beef and pork together. Once well combined add the mint and parmesan cheese. Mush together well. In a cup, use a fork and beat the egg, add salt and pepper. With your fist punch a well in the meat mixture and add the egg. Mush again well. Once all ingredients are mixed well, start making meatballs.
