Crispy Ranch Chicken

Ingredients

  • 2 C crispy rice cereal
  • 1/2 C grated parmesan cheese
  • 1 envelope (1oz) ranch salad dressing mix
  • 2 egg whites, beaten
  • 8 skinless, boneless chicken thighs (abt 5 oz each)

Preparation

Step 1

preheat oven to 350
spray lg. baking sheet w/ nonstick cooking spray
combine rice cereal, parmesan & ranch mix in lg. bowl

place beaten egg whites in med bowl
dip each chicken thigh in egg whites & then in cereal mixture to coat evenly

arrange coated chicken on prepared baking sheet
bake until golden juices run clear when chicken is pierced w/ knife, 20-25 min

serve hot

FOR A BUTTERY TASTE, DRIZZLE 1/2 c MELTED BUTTER OVER CHICKEN BEFORE BAKING
