Black Bean Salsa

Ingredients

  • 1 c. chopped red onion
  • 1/2 c. chopped bell pepper
  • 1 clove garlic, crushed
  • 2 Tb. oil
  • 1 (16 oz.) can black beans
  • 1/2 tsp. salt
  • 4 plum tomatoes, chopped
  • 2 Tb. chopped cilantro
  • 3 Tb. fresh lime juice
  • 1 1/2 tsp. hot pepper sauce
  • 1 tsp. grated lime rind

Preparation

Step 1

Saute onion, bell pepper, and garlic in oil in skillet until tender. Add to beans, salt, tomatoes, jalapenos, cilantro, lime juice and pepper sauce, mix well. Top with lime rind. Serve hot or cold.
