Fried Zucchini

Ingredients

  • 3 to 4 large zucchini
  • 3 cups flavored bread crumbs
  • 2 cloves garlic, crushed
  • ¼ cup grated Romano or Parmesan cheese
  • Salt and pepper
  • Oil for frying
  • 2 eggs
  • 1/8 cup milk

Preparation

Step 1

Wash (do not peel) zucchini. Slice in cirles or lengthwise approximately ¼ inch thick. Beat eggs and milk together in bowl. In a large bowl, stir together bread crumbs, crushed garlic, cheese, salt and pepper. After dipping zucchini in egg mixture, dip in bread crumb mixture coating both sides well. In large frying pan, place oil and fry zucchini until golden brown. Lay on paper towels to absorb oil.
