Dad's Italian Sausage Soup

Ingredients

  • 2 lbs Italian sausage
  • 3 whole plum tomatoes
  • med onion chopped
  • 2 to 3 celery chopped
  • 1 green bell pepper chopped
  • 2 garlic cloves minced
  • 2 cups shredded cabbage or 20 Brussels sprouts
  • 3 potatoes cubed
  • 3 carrots sliced
  • 1 cup red wine
  • 1 tbps cloves
  • 3 tsp basil
  • 2 tsp parsley
  • 3 tbsp brown sugar
  • 10 to 12 drops Worcestershire
  • 2to4 cups chicken stock

Preparation

Step 1

Simmer sausage in a small amount of water until sausage shrinks about 1 hour. Remove from water and cut into 1 inch chunks. Return to pan with all other ingredients and simmer for 2 hours. Add uncooked specialty pasta 1/2 hour before serving(optional).
Serve with Parmesan cheese and crusty bread.
