Ingredients
- For the chicken:
- Chicken Thighs
- Ginger, chopped
- Garlic, chopped
- Jalapeno, chopped
- Chicken broth
- Lemongrass
- Green curry
- For the salad
- Romaine
- Carrots
- Cucumber
- Cilantro
- Rice noodles
- For the salad dressing
- Honey
- Miso
- Rice Vinegar
- Lime juice
- Sesame oil
- Avocado oil

Preparation
Step 1
Salt and pepper the chicken, brown in avocado oil and remove from pan. Saute ginger, garlic and jalapeños in the same pan as chicken until fragrant, then add chicken back to pan with broth, lemongrass and green curry. Braise until falling apart, then remove from pan and cook noodles in braising liquid.
Chop vegetables for salad.
To make the dressing, whisk honey, miso, vinegar and lime juice. Slowly whisk in oil until emulsified.
To make the bowls, add noodles, salad and chicken. Serve with hoisin and sriracha (optional).
