CAKE*****Brownie Surprise Pudding Cake

It separates into a cake-like layer around the outside with a running, sauce-like layer in the bottom. We had it for Sunday dinner.

13/11/11 - UPDATE - I added 1/8 tsp. of cayenne to the dry ingredients - really steps it up a notch!

Ingredients

  • EQUIPMENT:
  • 2 Servings
  • 1/4 cup flour
  • 1/4 cup sugar
  • 2 tbsp. + 2 tsp. Droste cocoa
  • 1/8 tsp. baking powder
  • 1/8 tsp. salt
  • 1/8 tsp. cayenne
  • 2 tbsp. beaten egg or egg substitute
  • 1 1/2 tbsp. unsalted butter, melted and cooled
  • 2 tbsp. milk - 1%
  • 1/2 tsp. vanilla extract
  • 2 tbsp. chopped walnuts
  • 2 tbsp. miniature semisweet chocolate chips
  • 1 1/2 tbsp. splenda brown - packed
  • 1/3 cup boiling water
  • Vanilla ice cream or custard sauce, to serve
  • 2 ramekins
  • 1 baking sheet

Preparation

Step 1

* Lightly *butter and sugar* ramekins, place on baking sheet and set aside.

* *Preheat* oven to 350°.

* *Place* flour, sugar, 1 tbsp and 1 tsp of cocoa, baking powder, cayenne and salt in a bowl and *whisk* to blend.

* *Place* melted butter, egg, milk and vanilla in another bowl and *whisk* to blend well. *Pour* the flour mix over the egg and *stir* with a spatula just until combined. *Stir* in the walnuts and chocolate chips and *divide* between the ramekins.

* *Place* the remaining tablespoon and teaspoon of cocoa and the brown sugar in a bowl with the boiling water and *mix* well. *Pour* over the mixture in the ramekins.

* *Bake* until a toothpick inserted in the centre comes out with a few crumbs clinging to it, about 20 minutes.

* *Remove* from oven and cool for about 10 minutes.

* *Serve* warm, in the dishes, topped with vanilla ice cream if desired.

I served them with some Devon cream in a small pitcher on the side to be added to the puddings as they were eaten. Was excellent but probably not necessary (and I'm sure the calorie content on this is high enough already).

The next time, I went with premium Haagen Dazs vanilla - yummy!
