Scallop & Shrimp Fettucini, McCormick & Schmick's

Ingredients

  • 1/2 pound dry or 1/3 pound fresh fettucini noodles
  • 2 tablespoons butter
  • 4 tablespoons fresh garlic, minced
  • 2 teaspoons shallots, minced
  • 1 1/3 cup cream
  • 1 cup Fresh Parmesan cheese, grated
  • 4 ounces bay scallops
  • 4 ounces shrimp
  • 1 tablespoon fresh parsley, chopped

Preparation

Step 1

Cook the pasta in boiling water until al dente. Rinse in cold water, drain and reserve.

In a large sauté pan over medium heat, melt the butter. Add the garlic and shallots. Coo until softened.

Add the cream and Parmesan. Cook over high heat for 1 minute to reduce the liquid. Add the scallops and shrimp and continue to cook for 1 minute more. Add the pasta and toss to blend. Cook for an additional 1-2 minutes to heat thoroughly.

Divide between two plates, sprinkle with Parsley and pass extra Parmesan at the table.
