Bran Muffins

Ingredients

  • 5 1/2 cups raisin bran cereal
  • 3 cups sugar
  • 5 cups flour
  • 5 tsp. baking soda
  • 2 tsp. salt
  • 4 cups buttermilk
  • 1 cup veg. oil
  • 4 eggs, beaten

Preparation

Step 1

In a large bowl with tight fitting cover, combine cereal, sugar, flour, baking soda and salt. Stir in remaining ingredients and mix well. Cover and refrigerate. Fill greased (paper lined) muffin tins, three fourths full of batter. Bake at 400 degrees for 12-15 min. Serve warm. Better will keep in ref. for 6 weeks. Bake only what you need and store the rest. Blueberries, raisins or dates may be added when filling tims.
