GANACHE

Ingredients

  • 2 parts chocolate
  • 1 part heavy cream (40%, NOT 30%)

Preparation

Step 1

1. Shave chocolate
2. Warm cream to barely simmer. Add to chocolate, stir only to moisten chocolate shavings. Set aside for a few minutes
3. Using a wide spatula, gently stir in circular motion from the center to the outside of bowl until all chocolate is incorporated.
