Ham and Asparagus Macaroni

  • 4 oz dried medium shell macaroni
  • 12 oz asparagus, trimmed and cut into 1 inch pieces
  • 2 Tbsp butter
  • 8 oz chopped cooked ham
  • 1 cup chopped onion
  • 6 garlic cloves minced
  • 2 Tbsp all purpose flour
  • 1 3/4 cups milk
  • 2 Tbsp finely shredded mozzarella cheese
  • 1 Tbsp finely shredded lemon peel


Cooking time 30mins


Step 1

1. Cook macaroni, adding asparagus the last 2 mins of cooking. Drain; set aside.
2. In a large skillet, melt butter over medium heat. Add ham, cook 4 mins or until ham begins to brown, stirring occasionally. Add onion and garlic. Cook and stir 3 mins more. Add flour, stir to coat. Add milk. Cook and stir until thickened and bubbly. Cook and stir 1 min more. Stir in macaroni and asparagus, mozzarella, and lemon peel; heat through.
