Ingredients
- 1/4 Cup Olive Oil
- 1 Carrot (diced)
- 1 Red Bell (diced)
- 1 Eggplant (diced)
- 1 Can Diced Tomatoes
- 4 Garlic Cloves (minced)
- 1 Small Can of Paste
- 1 Tablespoon Chilli Powder
- 1 Teaspoon of Oregano
- 1/2 Teaspoon Paprika
- 1 Teaspoon Dried Basil
- 8 Slices of Cheddar
- Whole Wheat Buns
Preparation

Instructions
Add the oil to a skillet and cook the carrot and pepper on medium high heat for about 5 minutes.
Add in the Eggplant and diced tomatoes and cook for another 5-7 minutes until the vegetables are soft.
Stir in the rest of the ingredients (minus the cheese and buns) and cook another few minutes until everything is mixed and heated.
Serve on the buns with 2 slices of cheddar cheese.
