- 4 pasteurized egg yolks
- 450 ml of whole milk
- 2 tbsp of golden syrup
- 300 g of frozen blackberries
- 2/3 cup and 3 tbsp of sugar

This is an awesome blackberry gelato. The gelato is also great for the freezer after the mix is done in the ice-cream maker, just let it stand for af bit before you serve it. It’s still perfect creamy and delicious!
Heat op the blackberries in a pot, let them come to a quick boil. Then blend them to a blackberry “porridge”.
Beat the egg yolks with the sugar until it has a creamy texture and the yellow color is almost white. Then add the syrup and stir. In with the milk and get the “porridge” through a strainer. When everything is mixed well the mixture is ready. In to the ice-cream maker with it and stir until it is delicious creamy. It should have an hour in my machine. Come if necessary the gelato in a pot and put in the freezer for an hour. Ready to serve – a delicious gelato!
