Spinach stuffed chicken breast

Ingredients

  • 4 oz cream cheese
  • 1/2 c spinach
  • lttle bit of diced onion
  • 1 clove garlic
  • 1/4 t pepper
  • 4 bonelss chicken breast
  • 4 slices swiss cheese (or mozzarella)
  • 2 eggs. lightly beaten
  • 1.5 c Panko bread crumbs
  • 1/2 c parmesean
  • 1/2 t Italian seasoning
  • 1/4 t pepper

Preparation

Step 1

Combine filling ingredients

Butterfly chicken breast and pound with mallet or side of plate until 1/2 inch thick. Spread 1/4 on each breast. Top with swizz or mozzerella. Roll up chicken and secure with toothpick.

Dip each breast into beaten eggs. Then dip it into crumb mixture (crumbs plus seasoning). Make sure each breast is well coated.

Bake at 350 for 40-45 minutes or until chicken is no longer pink in middle and outside is golden.
