Glazed Orange Cake
- 1 can (15 oz) Mandarin oranges
- 1 box yellow cake
- 3 eggs
- 1/2 cup vegetable oil
- 1 orange, peel grated and juice reserved
- 1 cup powdered sugar
Spray bundt with cooking spray for baking with flour or grease and flour pan, drain oranges and reserve juice.
Combine cake mix, juice from can, eggs, oil and grated peel in a large bowl; beat 2 minutes. Pour 1/3 batter in pan, layer 1/2 the orange slices. Pour another 1/3 batter into pan; layer remaining orange slices. Pour remaining batter into pan.
Bake at 350 for 40-45 minutes or until toothpick comes out clean. Cool in pan 20 minutes. Remove from pan, cool on wire rack until completely cool.
Combine juice from orange and sugar in a small bowl; whisk until well blended. Gently brush glaze all over cake with a pastry brush.
