Tip: How to cook quinoa: In a saucepan, bring 1 1/2 c. water to a boil. Add 1 c. rinsed quinoa and simmer, covered, until water is absorbed and quinoa is tender, 15 minutes. Fluff with a fork; season with a pinch of salt. Makes 3 cups.

Ingredients

  • 2 1/2 T. olive oil
  • 1 onion, chopped
  • 1/2 t. salt
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 T. chili powder
  • 1 15 oz. can diced tomatoes
  • 1 15 oz. can black beans
  • 1 c. vegetable stock
  • 2 c broccoli, diced
  • 1 c. cooked quinoa
  • cheddar cheese, shredded, as garnish
  • sliced scallions, garnish (optional)

Preparation

Step 1

In a large pot, heat oil over medium heat. Cook onion and salt, stirring until soft, 7 minutes.
Add garlic and pepper and cook until tender, 4 minutes.
Stir in chili powder, tomatoes, beans, and stock. Simmer, partially covered and stirring, 15 minutes.
Add broccoli and cook, covered, 3 minutes.
Sir in quinoa and season with salt.
To serve, top with shredded cheese and scallions.
